Black Bean Chili (Vegan 🌱)

Ingredients:



Vegetable:

5 cloves of minced garlic

1/3 c. White Onion

1/3 c. Red Onion

1/3 c. Red Bell Pepper

1 tbs. minced Jalapeños

1 can Black Beans (8oz)


Wet:

2 tbs. Grapeseed Oil

1 tbs. White Vinegar

2 c. Vegetable Broth

1 1/2 c. Tomato Sauce

2 tbs. Tomato Paste


Seasonings:

1 tbs. Losia Organic Adobo

1 tsp. Salt, pepper, onion powder


*2 c. Gardein Ground Beef Crumbles


Topping:

1/4 c. Cheddar cheese

1 tbs. fresh mined Cilantro



Directions:

  1. Heat large pot to medium heat. Add oil, vinegar, onions, peppers, jalapeños, and seasoning. Cook until sweat.

  2. Drain & rinse beans well. Set a side.

  3. Add crumble, tomato paste, beans, broth, tomato sauce. Stir.

  4. Let simmer on low for 20-25min. Let cool for 5 min. Serve over rice and corn bread on the the side (optional).

  5. I topped my chilly with cheese and cilantro.
