Veggie Quinoa Bowl

*This dish was inspired by @plantbasedrd on Instagram.

Its been sometime since I last posted a recipe. But this one is super simple and quick! Full of flavor! Let me know what you think 🤗

Veggie bake

2 small broccoli heads 1 1/2 cups

1 large sweet potato

1/4 c. Red onion

1 tsp Herbs De Provence or (Rosemary, oregano, or thyme)

1 tbsp olive oil

*Mix well bake 400F 20-25min or until golden

Make Quinoa accordingly to package

(I boiled 1 cup of dry with a 1/2 cube of dry vegetable broth seasoning and water), *season with salt once done


1 tbsp Liquid Aminos

1 tbsp Mustard

1 tbsp Maple Syrup

1 tbsp Nutritional yeast flakes

*Roast 3 cloves of garlic (400F 5 minutes or until dull in color)

*mash garlic, then whisk all remainder ingredients (I doubled the liquid and yeast for more sauce)

*I cut some tofu to go with the bowl. However, you can add which ever protein of your liking.
